Tim McGraw's Green Smoothie and Kale Salad + Faith Hill's Healthy Carrot Salad


Tim McGraw's Green Smoothie

4 cups stemmed kale, lightly packed

1/2 avocado

1 small banana

10 ounces coconut water

1 heaping tablespoon protein powder, optional

Combine all ingredients in a high-power blender and blend until smooth.


Faith Hill's Carrot Salad (it is among Tim's favorite dishes.)

1 pound carrots, washed and peeled

Juice of 1 lime

1/8 cup extra virgin olive oil

1/4 cup cilantro, chopped

1/4 cup green onion, chopped

Salt and pepper, to taste

Using a peeler, cut the carrots into very thin slices. In a small bowl, whisk the lime juice and olive oil until it is emulsified and drizzle over the carrot peels. Toss. Add cilantro and green onion. Toss. Add salt and pepper to taste.


Tim McGraw's Kale Salad

1 bunch of kale, de-stemmed and finely chopped

1/8 cup white balsamic vinegar

1/8 cup extra-virgin olive oil

1/2 cup grated Parmesan cheese

1/2 cup dried cranberries

1/4 cup pumpkin seeds

Salt and pepper, to taste

In a small bowl, whisk the balsamic and olive oil until it is emulsified and drizzle over kale. Toss to coat all the greens. Sprinkle the grated Parmesan over kale and toss to coat. Add in cranberries and pumpkin seeds. Toss. Generously season with salt and black pepper.
